One Pot Lemon Parmesan Pasta Recipe!

I love finding recipes that need only one pot! These type of dishes really save on kitchen cleanup in our home. I recently made this One Pot Lemon Parmesan Pasta meal and was amazed at its yummy flavor. Even my husband, who doesn’t like vegetables, asked for seconds! If a lemon pasta sounds good to you, be sure to have the following ingredients on hand:

  • 12 ounces small shell pasta, preferably whole grain
  • 1 1/2 pounds summer squash, sliced and then cut in half or quarters, depending on the size of your squash
  • 1 tablespoon minced garlic
  • 1 heaping tablespoon fresh thyme
  • 1-2 teaspoons salt
  • 1/2 teaspoon freshly ground pepper
  • 4 1/2 cups chicken stock (if you are buying your chicken stock in a 4 cup size, just add 1/2 cup of water)
  • 2 cups baby spinach
  • 1 1/2 pounds boneless skinless chicken breasts, cooked and cubed
  • juice and zest from 1 large lemon
  • 1/2 cup Parmesan cheese

Crock Pot Healthy Nachos Recipe!

Do you love nachos, but want to eat healthier? If so, do we have the recipe for you! This recipe has homemade tortilla chips with smoky crock pot salsa chicken, beans, and more! A friend recently made this Crock Pot Healthy Nachos dish for me and I loved it. If you’d like to make this recipe as well, be sure to have the following ingredients:

  • 1 1/4 pounds boneless, skinless chicken thighs
  • 3/4 cup salsa verde (choose mild, medium or spicy, depending upon your heat preference—I used medium)
  • 1 small poblano pepper, seeded and diced (optional for extra heat)
  • 1 tablespoon ground cumin
  • 1 teaspoon ground chipotle chili pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 (14.5 ounce) can low sodium pinto beans, rinsed and drained
  • 8 yellow corn tortillas
  • 1/2 teaspoon kosher salt
  • 6 ounces Sargento 4 Cheese Mexican Blend
  • Other desired nacho fixin’s: chopped green onions, sliced black olives, sliced jalapenos, cilantro, diced avocados, diced fresh tomatoes, sour cream

I just found the most amazing foot soak tutorial for our readers. Plus, it smells like mint and lime! Not only does it smell divine, but this DIY project is easy to make as well. Does this foot soak sound appealing to you as well? If so, just use these following supplies for your own homemade Mint Lime Foot Soak:

  • 2 cups Epsom salts
  • 1 lime
  • zester
  • peppermint essential oil
  • lime essential oil
  • green food colouring {optional}
  • 4~1/2 clean glass jars with lips
  • ribbon & paper embellishments for jars

PS: Wanting to save money on these glass jars? If so, you can usually go to a thrift store and pick up similar jars for around $0.50 to $1.00 each! Just throw them in the dishwasher and that’s it!

  • 1 cup pretzels, roughly chopped (measure after chopping)
  • ½ cup pecans, chopped (measure after chopping)
  • ¾ cup brown sugar
  • ¾ cup butter, melted
  • 8 oz cream cheese, softened to room temperature.
  • 3 cups diced apples (about 2 large apples)
  • ½ cup caramel sauce (I used Marzetti Old Fashioned Caramel Dip)
  • 3 cups whipped topping or whipped cream
