Vegan Raspberry Cheesecake Bars Recipe!

On our Thrifty Momma Ramblings website, we do not feature enough vegan dishes! So, I thought I’d share a recipe I recently made for my vegan sister in-law. These Vegan Raspberry Cheesecake Bars were absolutely amazing. In my opinion, you cannot go wrong with adding raspberry to any sweet treat. If you’d like to make this raspberry recipe as well, be sure to have the following:

  • ½ cup pecans
  • ¾ cup oats
  • 1 cup medjool dates
  • ½ tsp cinnamon
  • pinch of salt
  • 1 cup cashews, soaked
  • 1 large can coconut milk (just the cream)
  • ¼ cup maple syrup
  • juice of 1 lemon
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup raspberries
  • 1 tbsp maple syrup

Going to pretzel vendors can be pricey. I recently paid around $5 for a medium pretzel, which was too expensive for my budget. So, I recently found this Homemade Soft Pretzel Bites recipe and decided to give it a try. Long story short, I loved them. From now on, I’ll make pretzels at home. If you’d like to try this yummy recipe too, be sure to have the following ingredients ready:

  • 1 1/2 cups warm water
  • 2 tablespoons light brown sugar
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 3 ounces unsalted butter, melted
  • 2 1/2 teaspoons kosher salt
  • 4 1/2 to 5 cups all-purpose flour
  • Vegetable oil
  • 3 quarts water
  • 1/2 cup baking soda
  • 1 whole egg, beaten with 1 tablespoon cold water
  • Coarse sea salt

For the cheese sauce:

  • ½ Tablespoon unsalted butter
  • ½ Tablespoon all-purpose flour
  • ½ cup milk
  • 8 ounces Cheddar cheese, grated

If you are like my family, then Spaghetti is a staple dish! We make spaghetti at least once a month, so we wanted to try something new and different. I recently discovered this Slow Cooker Baked Spaghetti recipe and this is my new favorite version. My in-laws even liked this dish and asked for the recipe! Want to make this dish too?   • 1.5 lbs. ground beef

One Pot Lemon Parmesan Pasta Recipe!

I love finding recipes that need only one pot! These type of dishes really save on kitchen cleanup in our home. I recently made this One Pot Lemon Parmesan Pasta meal and was amazed at its yummy flavor. Even my husband, who doesn’t like vegetables, asked for seconds! If a lemon pasta sounds good to you, be sure to have the following ingredients on hand:

  • 12 ounces small shell pasta, preferably whole grain
  • 1 1/2 pounds summer squash, sliced and then cut in half or quarters, depending on the size of your squash
  • 1 tablespoon minced garlic
  • 1 heaping tablespoon fresh thyme
  • 1-2 teaspoons salt
  • 1/2 teaspoon freshly ground pepper
  • 4 1/2 cups chicken stock (if you are buying your chicken stock in a 4 cup size, just add 1/2 cup of water)
  • 2 cups baby spinach
  • 1 1/2 pounds boneless skinless chicken breasts, cooked and cubed
  • juice and zest from 1 large lemon
  • 1/2 cup Parmesan cheese

I haven’t made this homemade scrub yet, but I’m betting that it smells divine! Can you go wrong with sugar and rose petals? I think not!
