Easy Easter Cookies

easter1

Ingredients

  • 3 tablespoons of butter or margarine
  • 1 package (10 oz., about 40) regular marshmallows
  • 4 cups of miniature marshmallows
  • 6 cups of Rice Krispies
  • ½ cup of turquoise candy melts
  • candy sprinkles
  • easy kids easter party food sprinkles

Directions
1. In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add cereal. Stir until well coated.

OR

1. Microwave butter and marshmallows on HIGH for about 3 minutes, stirring after 2 minutes; stir until smooth.

2. Pour the mix into a 9” x 13” x 2” pan that has been coated with cooking spray. Put a sheet of parchment paper over the mixture (to keep from sticking) and roll it out until it is about ½” thick.

3. Use an egg-shaped cookie cutter to make egg shapes (periodically dip the cookie cutter in water to keep the marshmallows from sticking to it).

4. Lay the egg shapes on a cooling rack until they’re firm enough to handle.

5. Heat the candy melts in the microwave in a small bowl. Dip one end of the eggs into it.

6. Return to the cooling rack momentarily, with a cookie sheet underneath to catch any drips.

7. Dip the treat ends into sprinkles and return to the cooling rack until they’re firm.

For best results, use fresh marshmallows.
1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.
Diet, reduced calorie or tub margarine is not recommended.
Store no more than two days at room temperature in airtight container.
To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. -Let stand at room temperature for 15 minutes before serving.

Kellogg’s Rice Krispies Hidden Surprise Easter Egg Treats

easter2

Ingredients

  • 3 tablespoons Butter or Margarine
  • 1 package (10 oz., about 40) regular Marshmallows OR 4 cups of miniature Marshmallows
  • 6 cups Kellogg’s Rice Krispies Cereal
  • ½ cup M&M’s Brand Chocolate Candies (plus some for snacking)
  • Canned frosting or decorating gel (optional)
  • 12 plastic snap-apart 3×2-inch Easter eggs

Instructions

  1. Thoroughly clean Easter eggs then coat inside of plastic eggs with cooking spray. Set aside
  2. In large saucepan, melt butter or margarine over low heat. Add marshmallows and stir until completely melted. Remove from heat.
  3. If your saucepan is large enough, add Kellogg’s Rice Krispies cereal and stir until well coated. If your saucepan is not big enough, add Kellogg’s Rice Krispies cereal to a large bowl and pour marshmallow mixture on top, stirring until well coated.
  4. Using greased hands, firmly press ¼ cup of cereal mixture into each plastic egg half. Use fingers to make hollow center in each half. (TIP: Use a rounded tablespoon measuring spoon and press firmly in the center of each egg. This will make hollowing out the center much easier.) I used a mini muffin pan to hold the egg halves upright while I was finishing the whole batch.
  5. Once the eggs have set, remove from molds and place on wax paper.
  6. Place about six M&M’s in each egg half. Gently press two halves of each egg together until they stick.
  7. You will have to have patience and keep pressing and molding around the seam.
  8. Let cool completely and decorate with frosting and M&M’s, if desired. I used melted semi-sweet chocolate and sprinkles for ours.

  2. Scoop out a handful of the mixture and shape into nests with lightly dampened hands. Set on a parchment-lined sheet, press a PEEPS® chick into each nest, and let them sit until set. Makes a dozen.

Pizza Croissant Rolls

  • 4 cheese sticks, halved
  • 1 (3.5 ounce) package sliced pepperoni
  • optional – marinara or ranch sauce for dipping

Garlic Butter Glaze:

  • 2 tablespoons butter, melted
  • ½ teaspoon Italian seasonings
  • ¼ teaspoon garlic powder
  • 1 Tablespoon grated Parmesan cheese
  • Try an Easy One Pan Italian Pasta Recipe.

Instructions

  1. Preheat oven to 350 degrees.
  2. Take each triangle of crencent roll dough and place about 6 pepperoni on the bottom of the triangle.
  3. Place half of a cheese stick on top and roll up. Place seam side down on a cookie sheet and bake for 10
  4. 14 minutes or until golden brown.
  5. While rolls are cooking, combine the melted butter, Italian seasonings, garlic powder and Parmesan cheese in a small bowl.
  6. When rolls are done remove from the oven and brush with the garlic butter glaze. Serve with marinara or ranch for dipping.

pizza2

Stuffed Pizza Waffles

Ingredients

  • 1 recipe pizza dough
  • 8 ounces mozzarella cheese, sliced
  • Sliced pepperoni, cut into quarters
  • Marinara sauce for dipping
  • Instructions

Instructions

  1. Preheat your waffle iron.
  2. Roll out the pizza dough on a lightly floured surface and cut into equal sized squares, about 3″ x 3″ but it doesn’t have to be exact.
  3. Lay the sliced mozzarella in the center of the dough, being generous with the cheese because some will leak out.
  4. Add the pepperoni, then top with another square of pizza dough.
  5. Place on the waffle iron and close the lid, pressing down firmly but do not lock the lid. The lid will raise slightly while the dough cooks, but that is fine.
  6. Cook for about 5 minutes, or until the dough is golden brown.
  7. Serve with marinara sauce for dipping.

pizza3

Poor Mans Pizza

  • Shredded cheese (mozzarella or cheddar)

Instructions:

  1. Place your tortillas or slices of bread on baking sheet.
  2. Spread with pasta sauce.  Add pepperoni, vegetables, herbs and spices.
  3. Sprinkle with cheeses.
  4. Bake at 400 degrees for 4-5 minutes until cheese is melted.

pizza4

Pizza Fries

Ingredients

  • 1 1/2 Cup frozen fries, baked or deep-fried
  • 2 Tablespoons diced pepperoni
  • 1/4 Cup marinara sauce
  • Pepperoni slices, for garnish
  • 1/2 Cup shredded mozzarella cheese, or more if needed

Instructions

  1. Preheat the oven to broil.
  2. In a small bowl, toss the fries with the diced pepperoni.
  3. Add the fry-pepperoni mixture to a fry boat or shallow bowl.
  4. Top with the marinara sauce, a few slices of pepperoni, and the mozzarella cheese.
  5. Broil in the oven until the cheese is melted and bubbly, about 1 minute.

pizza5

Pizza Eggrolls

  • Eggroll wrappers
  • Pepperoni slices
  • Mozzarella st
  • ring cheese
  • Dried oregano
  • Peanut oil for frying
  • Pizza sauce for serving

  1. Orient the wrapper with the points facing you, as a diamond shape.  Not like a square. Lay several pepperoni slices out in the middle of the egg roll wrapper, overlapping them a little.  Unwrap and lay the mozzarella string cheese out on top of the pepperoni.
  2. Season generously with dried oregano.
  3. Wet the edges of the wrapper.  Fold in the side points closest to the cheese.
  4. Wet the folded sides with your finger, then fold up the point closest to you over the cheese.
  5. Make sure the far point of the wrapper is wet , then roll the whole thing away from you, sealing the wrapper.
  6. Allow the rolls to “dry” on parchment while you are prepping the rest of the rolls.
  7. Fry in peanut or canola oil for about 2 minutes each.  I had my oil at about 375 degrees F.  If your rolls do not immediately start sizzling, your oil is not hot enough.
  8. Drain on paper towels and serve with warm pizza sauce.

Bacon, Bacon, Bacon, Bacon!!! bacon1

Bacon Pancakes Recipe

  • 12 slices of bacon
  • 2 cups prepared pancake batter (from a mix or from scratch)
  • softened butter
  • maple syrup
  • Here’s a recommended recipe for making pancake batter from scratch.

Instructions:

  1. Prepare the pancake batter with slightly less water or milk than instructed. A thicker batter will help prevent the pancakes from flowing into each other.
  2. Set your griddle to medium-high.
  3. Fry the bacon until crispy. Remove the bacon from the griddle and lay slices on stacked paper towels to remove excess grease (and to get more crispy).
  4. Carefully, wipe down the griddle with wadded paper towels, leaving only a very thin layer of grease to cook the pancakes.
  5. Return the cooked bacon to the griddle with at least two inches of space on both sides of the slices. (You’ll probably have to work in two batches.)
  6. Slowly pour batter over each bacon slice. After one minute, check the bottom side of the pancakes. Once browned, flip the pancakes and cook the other side to golden brown.
  7. Serve immediately with softened butter and warm maple syrup.

bacon2

Bacon, Egg and Toast Cups
Serves 6 or more

Ingredients:

  • Cooking spray
  • 6 slices white or whole-wheat sandwich bread
  • 1/4 cup butter, melted
  • 6 slices bacon, preferably thick cut
  • 6 large eggs
  • Coarse salt and fresh ground pepper

Instructions:

  1. Preheat oven to 375o F. Spray 6 standard muffin cups with cooking spray.
  2. With a rolling pin, flatten bread slices slightly and with a 4-1/4″ cookie cutter, cut into eight rounds. (Now, most of us don’t have a cookie cutter that large.
  3. Flatten your bread and place your largest round cutter on the bread and use as a guide to cut that size hole. 4-1/4″ is pretty much what a piece of sandwich bread will measure when flattened.
  4. So, you are essentially cutting the largest round you can minus any crust.)
  5. Cut each round in half, then press two halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup.
  6. Use extra bread to patch any gaps on bottom or sides.
  7. Brush bread with melted butter.
  8. In a large skillet, cook bacon over medium, until almost crisp (I cooked my bacon in the oven for 6 minutes on 375o F.)
  9. The bacon will continue to cook in the oven.
  10. Lay 1 bacon slice in each bread cup and crack an egg over each.
  11. Season with salt and pepper.
  12. Place muffin tin on a rimmed cookie sheet to catch any bacon fat.
  13. Bake until egg whites are just set, 20 to 25 minutes.

bacon3

Bacon Cinnamon Rolls

Ingredients:

  • 1 can Pillsbury™ Grands!™ cinnamon rolls with icing (5 count)
  • 5 bacon strips

Instructions:

  1. Preheat oven to 350°F.
  2. Heat a skillet over medium-high heat. Place bacon strips in skillet and fry for 2-3 minutes until still soft but slightly cooked. Remove bacon and pat dry with paper towels.
  3. Pop open the can of cinnamon rolls and unroll them into long strips. Lay one strip of bacon on each cinnamon roll strip, then roll them back up. Place each bacon roll in a greased pie pan.
  4. Cook according to package instructions, then drizzle with icing from the package.

bacon4

Bacon Wrapped Stuffed Jalepeno Poppers

Ingredients
  • 9 jalapeno peppers
  • 8 oz cream cheese, softened
  • ¼ cup salsa verde
  • ½ cup shredded cheddar cheese
  • 9 slices bacon cut in half
 Instrutions
  1. Cut the jalapenos in half and remove all of the seeds.
  2. Combine the cream cheese, salsa verde and shredded cheddar in a small bowl. Once combined, add to a pastry bag or a sturdy 1 quart ziplock bag and cut off one corner so you can squeeze the cheese out of the hole and into the peppers. Fill the peppers with cheese mixture.
  3. Meanwhile, cook the bacon in the microwave or saute pan for a few minutes until it’s starting to brown a little but is still soft and pliable.
  4. Cool and then wrap each jalapeno half in one piece of bacon. Secure with a toothpick. Place on a foil lined cookie sheet (with sides) and bake in a preheated 375 degree oven for 15 minutes.
  5. Set the oven to broil and cook for 2-3 minutes, watching carefully to make sure they don’t burn! This gives the peppers a nice roasty flavor and ensures that your bacon will be crisp.
  6. Remove the jalapeno poppers from the oven and cool slightly before eating. Super low carb and soooo delicious!!!!

YUM! Check out this LAVENDER LATTE MILKSHAKE recipe!

A Lavender Latte Milkshake sounds so good right now! It sounds like a refreshing afternoon treat, that’s for sure.

Milkshakes

Ingredients:
Lavender Simple Syrup, makes about 1 to 1 1/4 cups.
1 cup sugar
2/3 cup water
1/2 teaspoon dried lavender buds

In a small pot, combine the sugar and water. Whisk over low heat until the sugar dissolves. Now add in the lavender buds and cook over medium heat for 4-5 minutes until you can really smell the lavender. You don’t want the water to boil during this stage, but hot enough to steep the buds (similar to making tea). Turn off the heat and allow the mixture to cool (with the buds still in the mixture) to room temperature. Strain the buds from the liquid and store in an airtight container (can be stored at room temperature for up to two weeks).

To create the milkshake….. Combine 6-7 big scoops of ice cream, 8 oz. Starbucks Unsweetened Iced Coffee Beverage and 1 tablespoon lavender simple syrup. Blend, taste, add more simple syrup if you want a stronger lavender flavor.

Thanks to A Beautiful Mess for this one!
