I love purchasing fudge at those cute little shops! However, buying fudge in-store can be expensive. So, I made this Peanut Butter Banana Fudge recipe last weekend and was amazed at its taste! You have to try this sweet treat, because you will not be disappointed. If you’d like to make fudge homemade as well, be sure to purchase/ pick up the following ingredients:

  • 1 (10 oz bag) peanut butter chips
  • 1 (14 oz can) sweetened condensed milk
  • 4 Tbsp butter, divided
  • ¾ cup chopped banana chips
  • 2 cups white chocolate chips
  • 1 banana, very ripe

  • 1/2 cup of mayonnaise

  • 3 Tablespoons butter

Beef Stroganoff Recipe!

Growing up, beef stroganoff was a family favorite weekend meal! I recently tried a different recipe and it was absolutely delicious. Both my husband, kids, and in-laws loved this meal too! I know that we will be making this dinner again soon. Want to try this new re-vamped family dish as well? If so, here are the ingredients you’ll need to pick up or purchase:

  • 3 tablespoons of butter, divided
  • 1 pound fresh Cremini mushrooms sliced into ¼ inch thick slices (aka baby portobello mushrooms)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons cognac or brandy
  • 2 tablespoons butter
  • ½ pound onions, cut into medium strips the long way
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups beef stock
  • 1 tablespoon country Dijon mustard (this is a product that mixes whole grain and smooth Dijon)
  • 1 cup sour cream
  • 1 ½ pounds trimmed rib-eye steak, cut into cubes approximately 1½ inches
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons cognac or brandy
  • Chopped parsley for garnish, optional
  • Wide egg noodles, see note above

If you’ve read up on my DIY posts, you know that I love cupcakes, as does my family. So, I recently found these Orange Crush Cupcakes that I just have to make. I have yet to try this, but they look so delicious. Plus, Orange Crush is a great soda that my kids enjoy. Want to make these yourself? If so, you will need the following:

Cupcake:

  • 1 box White Cake Mix
  • 3 Egg Whites
  • 1/4 cup Vegetable Oil
  • 1 cup Orange Crush
  • 5 tbsp Orange Gelatin Mix

Frosting:

  • 1 cup softened Butter
  • 3 cup Powdered Sugar
  • 1 tbsp Orange Crush
  • 2 tbsp Orange Gelatin Mix

  • 2 cups prepared couscous
  • 1½ cups cooked shredded chicken tenders
  • ½ c salsa
  • 1 tsp onion powder
  • 2 tsp taco seasoning
  • 2 cups Sargento shredded 4 cheese mexican cheese (divided)
  • ½ cup sour cream

I love making appetizer-like dishes for dinner or lunchtime, because they are great for potlucks and parties! Plus, this is a great way to help with portion control, which is great for me. If you want to make these taco cups too, pick up the following ingredients:

  • 1 lb lean ground beef, browned and drained
  • 1 envelope (3 tablespoons) taco seasoning
  • 1 (10-oz) can Ro-Tel Diced Tomatoes and Green Chiles
  • 1 1/2 cups sharp cheddar cheese, shredded (or Mexican blend)
  • 24 wonton wrappers
