Even if you do not have any pasta leftover, you can usually pick up an entire box at the grocery store for around $1! This is a great thrift craft for your family! Here’s what you’ll need:

  • Fun chalk markers or paint
  • Black sharpie
  • White paper
  • Small bow-tie noodles
  • Glue

Salad can be the perfect meal during those hot summer days. I love going to a farmer’s market and picking up fresh ingredients! My family loves this Southwest Chicken Salad recipe, which is great for picky eaters. Want to make this recipe yourself? If so, here are the needed ingredients:

  • 4 cups of romaine/iceberg mix
  • 1 package Foster Farms® Refrigerated Grilled Chicken Breast Strips
  • ½ cup black beans, drained and rinsed
  • ½ cup corn, drained
  • 1 avocado, sliced
  • ⅓ cup red onion, chopped
  • ½ cup southwestern dressing or ranch dressing
  • ½ cup tortilla strips (optional)

Want a new take on quesadillas for lunch? If so, be sure to make these Black Bean and Corn Quesadillas! I have yet to make these, but I am sure that they’ll be a hit with my family. My boys love all varieties of quesadillas. Here are the ingredients you’ll need for this dish:

  • 1 tsp olive oil
  • 1 small clove garlic, minced
  • 1/4 of a small onion, chopped
  • 1/4 of a red or orange bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 heaping cup of frozen, thawed corn (or canned corn)
  • 1/4 cup salsa
  • 1 tsp brown sugar
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 2 cups shredded cheese (monterrey jack, colby jack, or cheddar)
  • 4 large tortillas
  • 2 tsp butter
  • Sour cream, for serving
